How to choose your oil for fryers

Here are the essential parameters to consider when looking for a healthy fryer oil.

#1 - Vegetable oil

Vegetable oil is probably the most commonly used and most frequently requested in recipes that require frying, as it has a relatively high smoke point. You can also opt for a mixture of several vegetable oils, such as corn, soybean and sunflower.

#2 - Oils labeled "special frying"

#3 - Smoke point

The smoke point of oil is the temperature at which the oil begins to break down while it is heated. At this temperature, the oil will begin to smoke before igniting as the temperature increases. As the oil begins to smoke, its flavor changes and it loses much of its nutritional value.

Peanut oil and canola oil are ideal for use in deep fryers because of their high smoke points. Fatty acids
