#2 - Sugar content

Of course, as a sweet treat, chocolate necessarily contains sugar, but its content can vary from one variety to another. The only rule to respect is that the sugar content must be lower than that of the main ingredients, in this case cocoa and/or milk powder and fat.

#3 - The perfume

The different types of chocolates

In this field, we can distinguish 3 main families of chocolate: dark chocolate, white chocolate and white chocolate.

Chocolat noir

Dark chocolate is also called fine chocolate or superior chocolate. It contains a minimum percentage of 43% cocoa. This includes approximately 26% cocoa butter and 14% dry, defatted cocoa. You can see from these figures that the fat content is much higher than the dry cocoa. The chocolate also contains optional ingredients such as sugar and soy lecithin as a binder.

Advantages: chocolate is enriched with minerals as it is composed of zinc, manganese, copper, iron, potassium. It acts as an anti-stress, but also plays an important role in improving concentration. Among other things, dark chocolate promotes weight loss.

Disadvantages: it is less attractive when you know that it is more bitter the higher the percentage of cocoa beans. 2 squares of chocolate certainly do not cover the recommended daily intake of magnesium for a person.

Who is it for? Dark chocolate is eaten directly and can be used in cooking (pastry, confectionery, chocolate shavings, chocolate decoration...). Ideally, choose chocolate with 70 or 80% cocoa. The more concentrated it is in cocoa, the less opportunity manufacturers will have to add other elements.

Chocolat au lait

Milk chocolate was invented by Daniel Peter. It is made by adding milk (in powder or concentrate) to the base paste of butter, sugar and dry defatted cocoa. For more crunchiness, some people do not hesitate to mix it with hazelnuts, walnuts and others. The chocolate must contain at least 25 % dry defatted cocoa, 14 % milk powder and 25 % fat (cocoa butter and milk fat). Milk chocolates called "fine" or "superior" have a minimum cocoa percentage of 30%.

Advantages: milk chocolate is very energetic. It is highly recommended when you feel tired or stressed. It improves your mood on a daily basis and if you are pregnant, its regular consumption could limit pregnancy-related complications. Its benefits on the heart are no longer to be proven.

Disadvantages: Milk chocolate is rich in carbohydrates, therefore sugar, but contains less fat than dark chocolate. It is still a very high calorie food.

Who is it for? Prefer quality milk chocolate. In cheap milk chocolate, manufacturers often replace the cocoa butter with vegetable fat to reduce production costs. It is used in pastry, but it can also be enjoyed as such. Caution! Milk will solidify if burned during cooking. Make sure you know the proper tempering techniques to use it in your desserts.

Chocolat blanc

The issue of white chocolate is very controversial. Some people think it is not real chocolate since there is no cocoa paste. Others assure that white chocolate is. Generally, this food is composed of at least 20% cocoa butter, 14% milk powder, sugar, lecithin and sometimes flavoring.

Benefits: One bar of white chocolate is equivalent to a large glass of milk. Low in sodium and cholesterol, it is enriched with calcium (essential in the formation of bones and teeth) and phosphorus. We love it for its sweet taste and its various flavors.

Disadvantages: One bar of white chocolate provides 6 times the percentage of sugar contained in a glass of milk.

Who is it for? It is not suitable for people who are in a period of muscle wasting, practicing a sport (fitness, cardio-training, bodybuilding...) or in a dieting phase. White chocolate is consumed directly. You can also use it in pastry, decoration or confectionery.

The other varieties of chocolate

The products derived from chocolate are numerous. Do not store your chocolate in the freezer.

Do not store chocolate in the refrigerator or freezer, because when you take it out and it is at room temperature, condensation will form on the surface which will not be very aesthetically pleasing.

How do you know if the chocolate is of good quality?
